The Catholic University of Cuenca (UCACUE) presents the results of applied research on apple cider and suro manufacturing in the community of Aguilán, Guapán parish, Cañar province, Ecuador. This work, organized into five chapters, addresses community challenges from a sustainability perspective, promoting the rational use of resources to improve quality of life without compromising future generations.
The study analyzes sustainable production and regional development based on the productive potential of apple and suro, a plant material used in crafts with high local and national demand. Key improvements are identified in apple industrialization for cider production, whose global market grew by 5% between 2023 and 2024.
The research combines qualitative and quantitative methods to characterize the historical, socioeconomic, cultural, technical, and commercial aspects related to these products. Additionally, a market study assesses potential demand and innovation opportunities to strengthen local production and promote a culture of associativity.
Finally, the book offers conclusions and recommendations aimed at generating sustainable production alternatives that contribute to community development and close theoretical gaps on the subject.
