The study offers an exhaustive exploration of Cojitambo, Ecuador, highlighting its physical geography and its historical relevance as a Cañari Panaca. It analyzes its civil and ecclesiastical evolution, emphasizing its integration into the social and religious structure, along with population and productive aspects. A theoretical framework is presented to understand the ancestral practices and knowledge that endure in Cojitambo, establishing clear conceptual foundations based on classical, seminal, and contemporary theories. The adopted methodology utilizes qualitative and ethnographic approaches, capturing the essence of local traditions. The study meticulously details ancestral agricultural practices, as well as gastronomic practices, exploring traditional recipes and culinary techniques. It also examines ancestral health practices, including the use of medicinal plants and the wisdom of midwives. The conclusions answer the research question and highlight the contribution to the theoretical framework on the ancestral practices and knowledge of Cojitambo, an Andean community.
